Sugar Free Chocolate Cupcakes
Delicious sugar-free cupcakes that your children will love!

  1. 1½ cups organic spelt flour
  2. 2 tsp baking powder
  3. ½ tsp bicarb soda
  4. 1/4 cup raw cacao powder
  5. ½ cup raw grated zucchini (if your child doesn't like 'bits' - process to a pulp in a food processor)
  6. 1/2 cup melted coconut oil
  7. 1/2 cup rice malt syrup
  8. ⅔ cup water water
  9. 1 tbsp vanilla extract
Sugar-free chocolate Icing
  1. 1 cup coconut sugar (processed into a fine powder)
  2. ¾ cup raw cacao powder
  3. 1 TBS butter (softened)
  4. 2 TBS milk
  1. Pre-heat oven to 170 c
  2. Combine flour, baking powder, bicarb soda, raw cacao powder and zuchini in a bowl
  3. Stir to combine
  4. Add the rest of the ingredients and mix to for batter.
  5. Place cupcake patties into a cupcake tray and spoon in mixture.
  6. Cook for about 20 minutes.
  7. Allow to cool before icing
  1. Mix all ingredients together until smooth. You may need to add a little extra milk to get your desired consistency
